My husband and son are both Celiac.   A few years ago I did not know the first thing about gluten-free/dairy-free diets. I have also participated in Dream Dinners where one assembles 40 meals in 2-3 hours and freeze.  This was wonderful for busy households.   Unfortunately, they don't offer gluten-free/dairy-free meals.   So I thought I would start my own with an informative twist.
